THE SECRETS OF THE DISTILLATION PROCESS

Live a unique experience at the heart of the region’s rst whisky distillery.

During this visit, Fanny and Jean Baptiste will unveil the 7 key steps of the production of our whisky. It is a local whisky, produced with einkorn, a regional cereal, that will add a special note to the spirit.

You will be introduced to the secrets of whisky production. It is a unique opportunity to discover the delicate art of distillation and every step of the process.
We will explain everything from the choice of the cereal at a local farm, to the bottling of the end product, which will give you a different approach to whisky tasting.

In the distillation room you will discover an Orthes column still from 1928. This type of still allows the aroma preservation by its slow and continuous process. Its settings are made carefully by hand. Jean Baptiste restored this century old machine which you will see during the tour.

  • The cereal selection, a crucial step that sets the aromatic pro le of the future whisky.
  • The process of malting includes soaking, germinating and drying the cereal to convert it into
    malt and add aromas of toasted bread.
  • Mashing will produce a brew that you will be able to discover by yourself.
  • Fermentation is when the yeast transforms the sugar into alcohol.
  • Distillation is the alcohol concentration process.
  • A 3-year ageing process in barrel is compulsory for the spirit to become a whisky.
  • Blending and bottling are the nal steps before tasting.

PARTIAL ACCESSIBILITY FOR PEOPLE WITH REDUCED MOBILITY

Since the castle is more than eight centuries old, we regret not being able to welcome visitors in wheelchairs in all the buildings.

  • Only the distillery guided tour is partially accessible by wheelchair. On the other hand, the
    castle visit is impossible in a wheelchair due to the presence of staircases.
  • A PRM parking lot is available at the entrance.
